About the Location
On October 24, 2023, the newest wine gem in the center of Plovdiv was unveiled – the wine bar of the restaurant Atlas – Cork & Fork. Here, they offer 365 Bulgarian wines (one for each day of the year) from over 110 wineries across Bulgaria. Cork & Fork showcases the five wine regions of Bulgaria with the most characteristic grape varieties and wine styles. Emphasis is also placed on local varieties, showcased on a dedicated shelf, as well as organic wines. The wine selection is curated by leading oenologists in Bulgaria: Gergana Todorova and Krasimira Kodukova. The head sommelier at Cork & Fork is Tanyo Tanev.
Apart from its wine list, Cork & Fork impresses with its unique and authentic atmosphere. The wine bar is located in the heart of Plovdiv, in a building known among locals and city guests as the Atlas Building, constructed in 1923 by architect Stoyko Stoychev. The facade’s forms are in the prevailing art-deco style in Europe at that time.
Undoubtedly, the building and its history are impressive, and intriguingly, in Plovdiv’s archives, a connection with wine was discovered. It takes us back 100 years when, in the neighboring building, the “Grand Hotel Molle” was opened in 1911 with a lavish celebration. It was one of the most expensive and sophisticated hotels in Plovdiv at that time. The building was owned by a Bosnian named Dimitar Molle, who attracted aristocratic guests from Bulgaria and abroad not only with comfort and luxury but also with fresh food and top-notch wine.
In proximity to the building was the Grape Market, located in the place of today’s square with the same name. There, in addition to selling grapes, producers showcased their best wines from their own vineyards. The market turned into a kind of competition for the best wine. During this period, hotel and restaurant owners managed to purchase large quantities of wine. Storing it became a challenge for Dimitar Molle, who decided to rent the underground space of the Atlas building for this purpose. There, he stored barrels with Stanimashka Malaga, Brezovski Misket, and other popular wines of the period. This was possible because, at that time, the cellars under all buildings were connected with doors for easier evacuation or to share necessary resources. This allowed the wine from the dozens of barrels in the basement of the Atlas building to be served in the neighboring building.
